Indonesian Pork Truffles

You can fit two of these in out aluminum ovenable trays for the customer’s ease… sit them on a lovely scalloped edged silicone paper disc in the counter.

Method

Mix together the Asia spice mix & vero binder. Add to the mince with the colour preserver & mix, keeping an open texture.

Weigh out into 150g balls and form into nests.

Place a 15g slice of Ketjap sauce in the nest, followed by the mixed vegetables & another thin slice of sauce on top. Garnish with sesame seeds.
